First Post & My Famous Lemon Pound Cake

Hello everyone!
I'm SO excited to share my new blog with you! I've been chomping at the bit with ideas to share and I can't wait to start posting more and more! You can expect all sorts of posts from me about movies, books, writing, baking, crafts I'm into, TV shows, favorite music, and so on.  :) And now, for my very *first post*...

I'm here to show you my famous Lemon Pound Cake! Can you say delicious?? My brother and I love eating it for breakfast, it's a great treat to get your day started. To make this delectable treat, you'll need...

LEMON POUND CAKE:
  • 1-1/4 cups of flour
  • 1 tsp. baking powder
  • 1/2 tsp salt
  • 2 sticks of butter (softened)
  • 1-1/4 cups sugar
  • 4 eggs
  • 2 tsp lemon extract
  • 1/4 cup lemon juice
 
(note: I had to use coconut oil because we only had one stick of butter left in the house, lol)

Step 1: Preheat your oven to 350 degrees and grease a loaf pan

Step 2: In a mixer, cream the butter and sugar. Once creamed, add the eggs in one at a time on low speed.

Step 3: While the eggs are mixing, use a separate bowl to mix up the flour, baking powder, and salt.

Step 4: When the eggs are all thoroughly mixed in, add the lemon extract

Step 5: Begin to add in the dry mix, alternating with the 1/4 cup of lemon juice. Mix just until smooth.


Step 6: Pour into the greased loaf pan and bake for 65-75 minutes, testing it in the middle when done, toothpick or knife should come out clean when it's finished.  It may look a bit brownish on the outside, but it isn't burnt(it's the butter). Let it cool, and then enjoy! :D
